Add :z SELinux label to bind mounts in dev and sample docker compose files
...
`:z` tells Docker to label the volume for shared access among multiple containers.
Turns out to be important when there's for example a geopackage
in a shared data directory.

Set default values for min/max heap memory percentage in the base JRE image
...
Add `-XX:MaxRAMPercentage=80 -XX:InitialRAMPercentage=30` to the
`DEFAULT_JAVA_TOOL_OPTIONS` env var in the base JRE docker image
as they're good defaults so people doesn't need to be figuring
it out themselves.

Remove unused catalog-service microservice and client
...
The catalog service has been out of commission for a long time now,
becoming dead code.
The idea is still sound but the complexity of WebFlux makes it a
maintenance nightmare. Plus, with Java 21's virtual threads, it will be
possible to write a non WebFlux implementation with almost the same
benefits, except maybe for the reactive back-pressure support.

Force hiding the default admin user when the admin username and password is provided through env variables

If the admin username is overridden throuh the config properties
`geoserver.admin.username` and `geoserver.admin.username`, then
and the configured username is different than the default
`admin` username, then the default admin user is effectively disabled.
